Assistant Director of Culinary Services


 

In this role you will supervise all food preparation, food production functions, and service staff in the Palace Culinary Department.

PRIMARY FUNCTIONS

  • Reviews, approves, and monitors biweekly work schedules for Palace kitchen employees. Ensures compliance with department labor budget. Approves all scheduled and non-scheduled overtime for supervised employees administers and approves employee Personal Time Off request for Department supervised employees.

 

  • Ensures adequate supply of products on hand for Palace Culinary consistent with cycle menus; rotates food, beverage, and supply inventories to ensure first out inventory procedure. Assists with vendor deliveries and verifies consistency of delivery of specified order. Inspects deliveries to ensure all products meet quality standards.

 

  • Ensures the all food and non-food purchasing in Palace Culinary Department adheres to department budget. Calculates, maintains, and reports daily, month to date, and month end food and non-food supply costs.

 

  • Assists the Director of Culinary Services in development and preparation of annual department budget for food and non-food supplies.

 

  • Investigates and evaluates new food and non-food products and food services equipment for potential future use.

 

  • Performs weekly sanitation inspection of Palace kitchen, kitchen storage areas; reviews inspection reports with Director of Culinary Services and performs periodic inspections of these areas.

 

  • Implements work, sanitation, and safety standard for Palace Culinary Department in accordance with federal, state and local regulations and faculty policy. Ensures that all department supervised areas meet standard.

 

  • Coordinates and conducts in-service training for all Palace Culinary employees to ensure compliance with federal, state, and local regulations. Performs timely evaluations of all direct reports; assists reporting supervisors with staff reviews. Participates in employees disciplinary procedures in accordance with MorseLife disciplinary policies and procedures.

 

  •  Maintains three (3) day Disaster Supply in accordance with Disaster Menu and state regulations; rotates stock to maintain compliance. Prepares Disaster Order with primary vendors and secures vendor documentation of disaster water delivery.

 

  • Oversees menu and recipe development.  

 

  • Plans and supervises all catering events for Palace.

 

  • Supervises all Front of House staff and coordinates activities in dining room.

 

  • Assists with the training and development of wait staff to standards of proper sanitation and customer service. Assists with front of house staff schedules as well as wait staff assignments.

                                       

  • Additional duties as directed.

Job Requirements

What you’ll bring to the table:

  • Associate's degree or equivalent from two-year College or technical school
  • Two years of related experience
  • Flexibility with schedule
  • Must enjoy working with the senior population
  • Executive Chef Experience helpful
